About Bread Machines

f you have purchased a bread machine, this section will provide you with basic tips on
how to use your bread machine and what ingredients to use.

Most bread machine recipes will call for 1 teaspoon of active dry yeast, which is less
than that called for by the manufacturers of most bread machines.  1 teaspoon of yeast
generally is enough for a 1 to 1 1/2 pound of  bread.  You may want to add additional
yeast to suit your taste.  

When using a bread machine, always add the ingredients in the order recommended by
the manufacturer.

Remember to bring all bread ingredients to room temperature before they are added to
the machine.  This includes all ingredients that are cooked are come out of the
refrigerator.

Cold Milk can be quickly brought to room temperature by placing it in the microwave for
30 seconds to one minute on high power.  

For butter or margarine, cut into small pieces before adding to the mix.

Dried Fruits are not recommended for use in bread machines.

Always check the dough after the first 3 to 5 minutes of kneading.  If more than two
balls have formed, add water, a tablespoon at a time till one ball is formed.  If it has too
much moisture, add flour 1 tablespoon at a time.

Correct measuring is crucial to a successful loaf of bread.  
Use glass or clear plastic to measure liquids, using a level surface.
Stir the flour to lighten before measuring.  Measure exactly.
Brown sugar should be pressed firmly into the measuring cup.
Granulated sugar should be spooned into the measuring cup.
Shortening should be pressed firmly into a measuring cup and leveled     with a straight edged knife.
Use pre-measured sticks for margarine or butter.

Egg whites can be substituted for whole eggs.  Or, egg substitutes may also be used.  1
egg equals 1/4 cup egg substitute.

If you don't have buttermilk, use sour milk or low fat yogurt.  Make sour milk by adding 1
tablespoon of vinegar or lemon juice to a 1-cup liquid measuring cup and fill the
remainder with lowfat milk.

Powdered milk can be substituted for regular milk.

American White Bread

For a 1 pound Loaf - Serves 16

3/4 Cup Milk
1 tablespoon margarine or butter
2 Cups Bread Flour
1 Tablespoon Sugar
1/2 teaspoon Salt
1 Teaspoon Active dry yeast or bread machine yeast

Add ingredients to your bread machine according to the manufacturer's directions.  
Basic Egg Bread

For a 1 pound Loaf - Serves 16

2/3 Cup Milk
1 Egg
2 teaspoons margarine or butter
2 Cups Bread Flour
4 teaspoons Sugar
1/2 teaspoon Salt
1 Teaspoon Active dry yeast or bread machine yeast

Add ingredients to your bread machine according to the manufacturer's directions.
